Life expectancy numbers have recently shown the US at number 27, below smaller countries such as Croatia and South Korea despite the billions of dollars we put into "healthcare". To no surprise to my listeners, it has been attributed to our poor diet with 80% of Americans not getting the RDA for fruits and vegetables. As I was driving to swim practice, I noticed the line at McDonalds that circled the building at 6am. Those folks are starting their day behind in nutrients and ahead on toxin production that their body has to take on from the very start of their day. I was glad to hear my nutrition class report the fruits they had eaten for a day when we went around the room. Everyone ate at least 5 servings. My hope is to even increase that number along with the nutrient density of their vegetable choices each meal.
If we are not focused on change to improve our health, we will certainly be declining. We often leave our health for the broken healthcare system to fix. We follow the leads of our trusted physicians who are often not questioning their practice of medicine and how they might change it to make things better. In this episode I discuss an example of an unfortunate outcome of a patient following the lead of the healthcare system. It is not that they meant harm but the protocols moved so fast, and there was such a lack of communication, she became lost in a sea of treatment modalities that seemed to just be causing her more problems. This is certainly not the case most of the time, but patients deserve to be heard and educated and given the opportunity to ask questions and make their own decisions.
The most important thing a person can do to assure their health is to eat a whole foods plant based diet. That is a big change for a lot of people and can be very frustrating and confusing. Welcome and thank you for listening. Eating healthy is hard. There are temptations everywhere you look. Even the gas station is serving "food". The reality is that they entice people to come in where they are greeted by sugary drinks and greasy food. Even at the pump the videos blare of all the treats inside. As I was pumping gas the other day, the pump was covered with advertisements about the smoothies available inside. Smoothie? They are healthy correct? They are not treats. They are sugar bombs that addict you and your children to simple sugars.

I also present an exciting new study about atrial fibrillation and weight loss. We love helping people use food as medicine and are so excited for our patients that become medication free and full of energy.
I also talk about lectins, the new buzz word to sell books and make you feel good about not eating your vegetables. Spoiler alert, I am sticking to fruits and vegetables to fuel my Ironman training and racing.

Welcome and thank you for listening. Today I have a special guest, Jeff Chilton. He is the president of Nammex, nammex.com, a company that supplies certified mushroom extracts to the US supplement industry. He has been a leader in the field of mushroom science beginning in the late sixties and worked on a mushroom farm as early as 1973. He was involved in the cultivation and development of the shiitake, oyster and enoki mushroom sales beginning in 1978. His experience took him to China during the 1990s where he introduced the standardization of organic mushroom farming. The medicinal portion of the mushroom lies in the percentage of beta glucans. Jeff has been involved extensively in the chemical testing of the amount of beta glucans in extracts as well as DNA testing to determining the authenticity of the extracts.
During this episode we discuss all things mushrooms including their life cycle, when organic varieties are best and what makes a mushroom a must for people wishing to achieve optimal health and wellness.
Jeff and I both eat mushrooms several times a week. He believes that shiitake is one of the most health promoting grocery store mushroom varieties you can purchase on a regular basis. 85% of medicinal mushroom extracts come from organic farms in China making them a leader in organic mushroom farming. We would encourage you to try different varieties of mushrooms available in your local grocery store or asian markets. King Oyster mushrooms are one of my favorites and are known to have little chemical exposure even if not organic.
Be aware that foraging for wild mushrooms takes an education. Take time to learn from a reliable guide before sampling wild mushrooms. The wrong variety could lead to fatal liver failure so get educated. Jim suggests learning one or two local varieties well before venturing out on your own.

Welcome and thank you for listening. I remember taking a Flintstone vitamin as a kid. I liked the cherry ones, and I cannot be certain what happened to the purple ones. I also took a vitamin when I started running for no reason other than I was becoming more healthy. It seemed like the right thing to do. I switched to a mail a way vitamin when I met an really fit elderly gentleman running and he said that he took them. In a study reviewing the published data on vitamins in the Journal of the the American College of Cardiology looking at the CVD prevention and Treatment (volume 71, issue 22, June 2018) they found that multivitamins along with vitamin C, D, calcium, selenium showed no effect on preventing CVD. In fact niacin actually made things worse. Only folic acid had some protection against strokes and folate is abundant in a plant based diet so no worries there. We discuss this and a study from the JAMA Psychiatry published June 27, 2018 showing the benefits of exercise on Cardiovascular death and depression.
Sometimes we are afraid to start a new exercise or challenge our bodies. We fall into the mode of needing a rest day or protecting ourselves from potential injury from exercise to the point that we don't actually gain the benefits that we might potentially gain. We saw this in our membership with a squat challenge. People were afraid to start or push themselves because they have been told or believe that they will further damage their bodies. For those who made the leap and did the challenge, they felt empowered by their abilities and their gains in strength over the month. This is exactly what make our practice so unique. By sharing experiences, others in the practice become motivated to try new things and together the group grows healthier.

We all want more but at what cost. There are a lot of attachments to more. With more SAD food comes more disease. However, with a more plant based diet comes more health. They go together and cannot be separated. If you drive on the wrong side of the road there is a good chance you will get in an accident. Not always but eventually your luck will run out. That is were the conflict lies. We really really don't want to compromise, ever. We all eventually do. So would it not be better to choose more health? The compromise would be you have to learn to cook colorful, tasty, beautiful food that is also health promoting. You get more than you give hands down.
People start most diets knowing full well that is it temporary and they can hopefully fix their problem and go back to the same old way of eating and hopefully it will last for a while before the problem finds them again. The faulty logic is that the quick fix diet changes the surface only. The car looks clean but the frame and engine are still in disrepair.
Nothing is as good as the original equipment when it comes to the body and to food. If you process that bean or potato into a chip or pill it will never be as good as the whole food. If you have to have parts removed or replaced, your body will never function as good as it did before.
Holding on to oil, or animal flesh or processed animal fluids is not the way to health, and is quite frankly, a high price to pay for life itself.
Eat fruits and vegetables as close to their original form as possible. Get a minimum of 60 minutes of exercise each day. Maintain a positive outlook and smile. You will gain more health from those things than virtually any prescription out there.

Welcome and thank you for listening. Happy Father's days to all of the dads that tune in. This episode is dedicated to my father who has passed. It is my hope that by getting this message that plant based nutrition can reverse lifestyle diseases, many dads will not necessary develop these terrible diseases at such a young age. What has always been done does not often has little to do with what should be done. Working long hours and not taking time to care for one's one health does not help anyone in the long run. What is accepted as comfort food or rewards for stress or a quick snack to keep us going often takes it's toll over the long run. The reality is those so called treats are not even savored but eaten in a hurry while doing something else.
What really matters is the time you spend with those your care about not what you eat when you are around them. Can we be healthy and eat comfort food once in a while? It depends on your why. If it is to reverse disease and live the best and the healthiest you can then I believe the answer is no.
It is my wish that you find health and happiness being active with those around you that you care most about. It is not the comfort food but the comfort shared with others experiencing the beauty that this planet has to offer.

Welcome and thank you for listening. Today is a "What the ForK" episode on supplements. It seems impossible that there are so many benefits from eating a whole foods plant based diet and those claims certainly can generate a lot of discussion and debate. Luckily, there are many scientific papers to back up those claims as well as observational studies of large populations living healthy eating a plant based diet. The sad part is that there is not much money in carrots or cabbage. At is is not mouth watering to look at when presented in the whole form without a cheese sauce or bacon on top of it. But the food manufacturers know there are benefits and still would like to make money on the associated with plant so in comes the powder and supplement markets to make the same thing only better and in a chocolate flavored powder. So we are willing to pay $50.00 for a canister of pea protein but not $2.00 for a bag of peas. Peas are not sexy. Protein powder is. But you miss out on all the other things peas have to offer with only protein portion has been extracted. People hate peas! The protein powder sells. Go figure.
Take it one step further. How about the claims that a particular protein, collagen will be absorbed without being metabolized and taken up where we would like, our wrinkles and skin and make us look younger. Or taken up in the whole form and make us stronger. How about eating powdered bones to make our bones stronger? We all agree that eating protein powder all day long while sitting in a recliner will not make us strong. So how does bone do it.

Welcome and thank you for listening. Maybe I should have titled todays episode, How to get colon cancer? The American Cancer Society has been watching people over the past 10 years develop colon cancer at increasing rates in their 40s. The incidence is up 50% over the last 10 years. They now suggest we begin screening people at age 45 to detect this deadly form of cancer. But wait. Over the past 10 years we have not cured colon caner in those over 50. So how is screening going to cure cancer? Interestingly, the bacon pushing groups have been silent this week. Lay low until this colon cancer thing blows over and we can then start advertising bacon on everything from deadly beef burgers to chocolate protein bars. The world health organization labels process meat as a level one carcinogen. It you cook that animal protein on a hot grill long enough to kill the bacteria you then generate hydrocarbons and polycyclic amines that alter your DNA even by inhaling them as you walk by the grill increasing your risk of cancer. What to do? Get a colonoscopy and go to a barbeque? How about changing what is causing the problem, our nutrition.
Why do we loose our sense of adventure or desire to try new things as we get older. We would have never learned to walk had we not fallen a million times yet we did just that. Somewhere we became afraid to fail. It became a negative word. The word try is now used to connote the smallest of effort that will not be perceived as failing but applauded as trying. I tried but not too hard because then I may have failed. I ate vegetables for a day and got bored. I tried eating plant based but I felt weak.
Start decreasing your risk of cancer and heart disease now. Say no to animal meat, fish, and dairy. Increase your fiber by 10 grams today by eating a cup of berries, a bowl of beans and a big green salad. Add turmeric to your vegetables. Have some whole grains to bind bile acids in your intestine. Go outside and take in some good microbes as you exercise. And smile because you are becoming healthier today than yesterday.

Welcome and thank you for listening. This episode features Katie and Gwen from Plantpositiverunning.com. I stumbled upon their YouTube channel of the same name and was hooked. They are two of the most positive people I have met in a long time. They are both quite the ultra running athletes and have podiumed several times in 50 mile and 50 K events. They have run 100 miles in less than 12 hours. Gwen just set a Guinness Book of World Records by running 100 miles in full firefighter gear including the boots! They decided he should attempt this feat to gain attention for their newly formed 501C to promote a plant positive lifestyle. They focused this event on cancer prevention. Not only did Gwen run the 100 miles but they provided the community an opportunity to taste healthy plant food and run along side of him.
The doctor/chef/videographer/recorder messed up a little this episode trying to push buttons, cook, and lecture at the same time. So bare with the segment pieces recoded live from the nutrition class and following during a podcast interview.

Welcome and thank you for listening. Today I am honored to have Jeff Koettel on the show. Jeff has struggled with his weight most of his life trying numerous fad diets and hitting a maximum weight of 500 pounds. Today, Jeff attributes adopting a simple plant based nutrition plan to his ability to maintain his weight at 220 pounds. He shares his struggles with the various weight loss plans and the mental anguish associated with regaining weight. Most of these fad weight loss programs are just that; temporary weight loss solutions. They are designed for a quick weight loss and are willing to have you sign up again to repeat their programs after you have regained your weight. The media is flooded with advertisements showing thin beautiful people indulging in fatty, oily, sweet processed foods leading the us to believe that it is possible to control the intake of these things and everything is fine in moderation.
Jeff shares his story and gives some great tips that he uses to keep things simple while working long hours. He also shares how he deals with people who continue to temp him to eat poorly despite knowing what he has been through.
